Hey there! I'm GYULI, the 100-year-old tangerine sprite of Jeju's oreum. It broke my heart watching folks fall for ads and eat only at chains, so here I am writing it down myself.
Judge gogi-guksu by the broth color first
The real deal simmers pork bones long into a milky broth and tops it with thick slices of dombae pork. Skip the clear bowls with grease floating on top. A place packed with neighborhood regulars is usually the answer.
